Virtual Christmas Cookie Swap

Jennifer Shirk over at Me, My Muse and I is having a Virtual Christmas Cookie swap. The details are on the site. There is a COOKIE PRIZE! Now really shouldn't that be more than enough reason to take part? hehe

Here's my recipe. This is one my Mom made occasionally when I was a little girl. I know why she only made them occasionally too, because really you can't eat just one. They are so delightfully melt in your mouth good that you look down and suddenly every cookie you made has miraculously disappeared. There name is perfect too...

Spellbinders

1.5 C Flour
1.5 t. baking powder
1 t. soda
0.5 t. salt
1 C brown sugar
1 C butter
1 egg
1 C oats
1 C coconut
1 C chopped pecans
0.5 C crushed cornflakes

Combine flour, baking powder, soda, and salt. Cream butter and sugar until fluffy. Add egg and beat. Gradually mix in dry ingredients. Stir in oats, nuts, coconut, and cornflakes.

Spoon onto ungreased cookie sheet. Flatten with glass dipped in crushed cornflakes.

Bake for 12-15 minutes at 350.

Frost cookies with:
4 T. melted butter
2 T. hot water
1 t. vanilla
2 C powdered sugar

I actually haven't made these cookies in a really long time. Like at least 7 years, because we were living in Denmark at the time. Why haven't I made them since I say they are so good? Well I'm punishing my husband you see. Let me preface this by saying that it's really hard to translate recipes into things that are readily available in other countries. For instance, did you know that they don't sell Cream of Chicken soup in Denmark? They don't! I'm Southern! Half of the recipes in my book call for Cream of Chicken soup! So I had to learn to make it from scratch. But I'm digressing.

Back to the reason I don't make these cookies. We went home to visit my parents while we were living over in Denmark, and my brother came to see us and made these cookies. My husband was so taken with them that he told me I had to get the recipe... I'd made them for him like ten times before. Since then I've not made them again. Now my brother is a much better cook than me. I'll not argue that point. Everything he makes is beyond delightful, but my stuff is at least usually recognizable as the same recipe!!!

I think I'll have to make these again soon though cause mmmm now I want some!

Just make them early in the day and you and kids eat them all before he gets home. Win/win.

That's too funny that you're punishing your hubby! LOL!

Maybe you can give them as a Christmas gift to him. :)

Death by Coconut. These cookies are great. I made a batch and almost ate a quarter of them myself. Good thing I am playing volleyball tonight for several hours....
